This is what we're having for supper tonight, with hashbrowns and fresh fruit:

Easy Breakfast Casserole:

1 lb. sausage
1 can of crescent rolls
2 cups shredded cheese
4 eggs (beaten)
3/4 cups of milk
Salt and pepper to taste

Brown sausage and drain. Line the bottom and sides of a 9x13 baking pan with the crescent rolls and press together all of the "seams." Spread sausage on top, then spread cheese on top. Add everything else in a bowl and then pour it on top of the sausage and cheese. Bake at 425° for about 15 minutes or until set. Let stand 5 minutes, then cut into squares and serve.

That's it! :) It's so good heated up for leftovers in the morning, too. You can also add green chilies for a little "heat" if you like.

awesome! My kids really like breakfast casseroles

Here's one of our favs:

Charleston Casserole

Ingredients
· 12 slices bacon or 8 sausages
· 1/4 cup butter, melted
· 3 cups croutons (seasoned is better)
· 1 ½ cups grated Cheddar cheese
· 6 eggs
· 1 cups milk
· 1 tablespoon prepared mustard
· salt and pepper to taste
Directions
1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
2. Preheat oven to 325 degrees F.
3. Melt butter in the microwave, or in a small pan on the stove over low heat. Spray a 9x12 inch baking dish with vegetable spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle with grated Cheddar cheese.
4. Crack the eggs into a bowl, whisking to break up the yolks. Add milk, peppers, mustard, salt, and pepper, and beat until well-combined. Pour over the croutons and cheese, and sprinkle with crumbled bacon.
5. Bake in the preheated oven for 40 minutes. Remove from oven and allow to stand 10 minutes before serving.

I made something like this for our sleep over last weekend, but I made them individual...like what we call "Cheeters".
The kids went NUTS over them. I made two batches.
