My DD Erin has a bumper crop of fresh greens now growing on the farm! We got about 5 lbs. of assorted mix and match greens this week at pick up. I brought home 2 lbs. of kale. As well as a couple lbs. of other greens. I think I'll make a big pot of soup or something with it. Any favorite ways to use this leafy green?
Or any other stuff like spinach, arugula, mustard greens, collard greens, escarole?
Especially interested in things that would freeze well as I can't eat soup all week. I'll fix some for dinner then freeze what's left.

I think it was Melissa D'Arabian on Food Network ($10 dinners)
that had a crispy kale chips or something like that.

I have tried the Kale chips they are addictive once you get use to the taste. They taste like toasted sea weed. Everyone I have given them to likes it very much. This is for the next time you have kayle on hand.
