Lots of tomatoes!

We have tons of tomatoes from Erin's farm! I've been making casseroles, gazpacho, spaghetti sauce. What's your favorite thing to make with lots of tomatoes?
I even like them fresh in slices on sandwiches....grilled cheese with tomatoes...yum.

I would DEFINITELY make some homemade salsa. I LOOOOOVE homemade salsa (don't forget the cilantro!).

Love salsa - and love cilantro (although dh doesn't).
I guess I will have to make salsa and just put extra cilantro in mine so he will eat some!

I Love gazpacho, salsa and I love to eat buttered toast and sliced tomatoes and salt & pepper.

My grandmother would eat sliced tomatoes sprinkled with Sugar.... I think is was a Dutch thing.

Mmm...this thread is making me want grilled cheese with Tomato soup. I ADORE creamy tomato soup with lots of basil. mmm
