Have Your Way With Paper

I'm bringing this over from the last home.
Since DD has an organic veggie farm, I'm always on the look out for new and different ways to use your summer produce. Have a good veggie recipe?....Please share.

I love slicing up summer veggies (squash, zucchini, potatoes, onions) and putting them into tin foil. Then, I put a couple dollops of butter on top, as well as some salt, pepper, lemon pepper, and serendipity; wrap it up with more tin foil, and let hubby put it on the grill while he is grilling whatever meat we are having with it....usually pork chops or chicken. Mmm! mmmm! mmmm!

Yep, super simple and very delicious.

I was really into bbq'd eggplant last summer. Just slice eggplant, brush w/ your fav bbq sauce, grill both sides until warm and nice markings. Mix up some 'garlic mayo' - light mayo with fresh pressed garlic and black pepper to taste. Spread the mayo mix lightly on the slices and top with a tomato slice and a little more bbq. Wait until are are warmed through. YUMMO!!
