Asparagus Cake

INGREDIENTS:
3 cups flour
2 cups sugar
2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 1/2 cups vegetable oil
2 tsp vanilla
3 eggs
1 small crushed pineapple, with juice
2 Tbsp grated orange zest
1 1/2 cups chopped nuts
2 cups grated asparagus (fresh or frozen)

DIRECTIONS:
Powdered sugar icing with orange zest
Sift dry ingredients together and add remaining ingredients.
Mix all together well. Bake in a greased and floured tube pan at 350 degrees for 1 hour.
This makes a large moist cake. Use regular powdered sugar icing with orange juice and zest.

It does SOUND gross, but I bet it isn't much different than a zucchini bread...the recipe is very similar!!
